We refuse to exit summer quite yet and so we have some transitional salad recipes to try out – it’s all about balance so close your eyes and dream of sea and surf while cuddling into those autumn evening fluffy socks!
Go To Green Salad
Grab a bag of green mixed lettuce leaves, chop some chunky sliced avocado, sprinkle over some Parmesan shavings (for that salty kick), a handful of whole almonds, lightly roasted with a dash of soya sauce (for added crunch) and finish it off with a sweet and zingy vinaigrette.
Fast Fruit Salad
It’s hard to handle the idea of the end of summer, but we literally fall headfirst into everything autumn. Lettuce leaf salads maybe the first thing you think of but don’t dismiss the fruity numbers.
Crunchy pears (Conference are good!) and crisp sweet apples (like a Pink Lady) can be quickly diced. Alongside a cup of red grapes, halved. Combine in a bowl 2/3 of a cup of Greek+honey yoghurt, a tablespoon of lemon juice with a dash of vanilla extract, cinnamon (we can’t get enough of it!) and a sprinkle of nutmeg.
Dress and coat the fruit evenly with the creamy dressing. For extra crunch, if you have some nuts handy, chop and sprinkle then one (we love a pecan!)
Speedy Supper Salad
Jazz up your salad with autumnal oranges this month. Drain a tin of chickpeas and cube 103g of crusty bread ends or day-old French baguette. Spread them out on a baking tray and drizzle with olive oil and bake for 12 minutes on 200 degrees.
Make a basic vinaigrette with 1 tbsp olive oil and 1/2 tbsp balsamic vinegar.
Roughly chop 250g tomatoes and peel and segment 2 oranges. Pop any leftover juice into the vinaigrette. Finely chop a sprig of mint leaves and add to bowl with a handful of salad leaves.
Gently toss everything together and tear up a ball of mozzarella on top! Serve and await a deluge of compliments!
