Celebrate St Patrick’s Day in the Greenest of Ways!

With St. Patrick’s Day on the horizon, we thought we’d get in the shamrock spirit with some greener suggestions to help celebrate the day!

 

Green Eggs and Ham

 

This isn’t just the recommendation of Dr. Suess. Kick off your celebrations with a breakfast of champions. Skip any food colouring ideas and dive straight in with spinach and lots of fresh herbs to give your scrambled eggs a green makeover!

 

Green Spinach and Cucumber Smoothie

 

Replace your pint of Guinness this year with an equally iron-rich (but greener!) alternative!! Rich in vitamins, antioxidants, and fibre, it’s the perfect cleanse for your body and also dairy-free:

 

Ingredients

 

1 apple (medium)

1½ cup spinach

1 cucumber

1 avocado

2 cups almond milk

8 pitted dates

 

Method

 

Step 1: Peel and dice the apple and cucumber. Cut the avocado in half and remove the stone. Roughly chop the dates.

 

Step 2: Place all the ingredients in a blender and process until smooth.

 

Courgette Noodles

 

Retrieve your spiraliser from the depths of the cupboard and replace a portion of pasta with a greener version! It will improve your digestion, maintain blood sugar, and energise your body while also pleasing your taste buds!

 

Method

 

Step 1: Toss your spiralised courgette with 2 tsps salt, and place in a colander to drain for 30mins.

 

Step 2: Add courgette to boiling water; cook for one minute. Drain; rinse immediately with cold water to stop cooking.

 

Step 3: Heat butter in a pan over medium high heat. Add courgette and 1 tsp garlic puree; cook and stir until just tender, about 5 mins. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
